When looking to creating the right texture in fruit preparations, formulators often turn to chemically modified starches. These thickeners can withstand most of the challenges during processing such as low pH, high temperatures and high shear, but are not particularly label-friendly. However, clean label texturisers like functional native rice starches can also do the job.
